Sure I'll share this simple recipe...well, it's not really a recipe, it's a an easy boxed mix, just add your own meat. We discovered this is a hearty, one-pot camping meal last summer; it smells so good cooking outside!! With a little hot sauce, it warms you right up around the campfire.
Buy an 8 oz. box of "Zatarain's New Orleans Style Jambalaya Mix" (red & white box) in the rice section at the supermarket. Buy one pound of uncooked, cleaned and peeled shrimp, (or clean and peel them yourself) and one 14 oz. Hillshire Smoked Sausage. Slice up the sausage into 1/4" rounds. Other meat options are pre-cooked chicken or ham, cut into bite sized cubes. The directions call for 1 pound of meat, but it's better if you have more, especially if you plan to stretch the recipe with additional rice.
Here are directions straight off the box:
1. In a 2-1/2 quart saucepan, combine 2-1/2 cups water, 2 tablespoons vegetable oil and bring to a boil.
2. Add Zatarain's Jambalaya Mix and meat (sausage--wait on the shrimp because they cook quickly), return mixture to a boil.
3. Reduce heat, stir, cover and simmer over low heat for 25 minutes (add shrimp during the final 10 minutes of cooking).
4. Remove from heat, let stand 5 minutes, fluff and serve (or transfer to crockpot for transport).
Additional notes:
5. To easily stretch the recipe (as for a large group of hungry Monarchs fans), add one 2-cup bag of Uncle Ben's boil in a bag rice and stir in well.
6. Add 3 dashes of Tobasco to spice it up (more or less as you prefer).
