The food thread

I thought it might be fun to start a thread about food! Why? Honestly, the biggest reason is that I have been more obsessed with food lately as I am on a diet and dealing with all those diet issues that come up. Plus I think that food is a very interesting, broad topic anyway that is full of conversation.

I would like for this thread to be a discussion about anything and everything regarding food-diets, recipes, ideas, your favorites, cravings, stories, cultures, customs, and whatever else you can think of.
 
Here is one of my favorite childhood favorites. Heck, it still is my favorite!


Porcupine Meatballs


• 1 lb. ground beef
• 1/2 c. uncooked rice

• 1 1/2 c. water, divided

• 1/3 c. chopped onion

• 1 tsp. salt

• 1/2 tsp. celery salt

• 1/8 tsp. garlic powder

• 1/8 tsp. black pepper

• 1 (15-oz.) can tomato sauce

• 2 tsp. Worcestershire sauce



Mix ground beef, rice and 1/2 cup water, onion, salt, celery salt, garlic powder and pepper together in a medium bowl. Form into 12 meatballs. In a 10-inch skillet, brown on all sides, then drain fat off. In a small bowl, mix tomato sauce, 1 cup water and the Worcestershire sauce together and pour over the meatballs. Heat to boiling, then reduce heat, cover, and simmer approximately 45 minutes, adding more water if necessary.
 
Wow, what a great idea for a new thread! I am a self confessed "foodie" and am also on a diet right now. No sugar, No or very little saturated fats, and No refined carbs...it's rough. :D I've so far lost 10 pounds...and working out six times a week probably does help...Anyway, I've got a great recipe for Chicken Enchiladas...not exactly completely homemade (passed down from the great "Old El Paso" ;) ) but delicious anyway!

Ingredients needed...

1 pound of chicken breasts, cut into cubes or thinly sliced....your choice

12 soft taco sized tortillas

2 cans of Old El Paso (or your favorite brand) green enchilada sauce.

1- 4.5oz can of chopped green chilis

1- package of cream cheese, cut into cubes

1 cup of shredded cheese (mexican blend)

Preheat oven to 400 degrees. Cook chicken all the way through, add can of chilis and cream cheese cubes and cook until cream cheese melts.

Spoon filling into tortillas and roll up, place seam side down into lightly greased 13x9 baking dish. Pour enchilada sauce over enchiladas and sprinkle with cheese...bake for 15-20 minutes. I usually serve this with spanish rice on the side. DE-LISH! Every guest I make these for ALWAYS asks for the recipe...I hope someone decides to make them and loves them too!...

 
I have a food story!

Yesterday when I was early for anatomy class the "older" people were discussing hot cereal. Since I never had any hot cereal (grits, oatmeal, etc.) I decided to chime in and say so. They all looked at me in shock. Anyway, I gues I just didn't realize how many people liked hot cereal. To me it looks regurgitated.

BTW, I loved PB&J as a child and its still my favorite sandwhich now.

3 slices of wonder country white bread
1 jar of peter pan creamy peanut butter
1 squeezable bottle of smuckers grape jam

Spread peanut butter on two slices of bread
Spread jam on both sides of the third slice
Place the slice with jam in between the peanut butter slices and enjoy!
 
Call me "older", (ok..call me old), but I have oatmeal every day. (Maple and brown sugar)
...and peanut butter has to be the most disgusting thing out there. YUCK!


MMmmmmm...porcupine meatballs...haven't had those since I was a kid.

I love oatmeal, grits, Malt-O-Meal, and every other hot cereal, and I'm Generation X. Oatmeal with brown sugar, raisins, and milk, mmmm.
And peanut butter is the most wonderful food out there!! Unfortunately I haven't been able to partake of it much since I started the diet. Peanut butter is a lot of points. That's been the hardest thing to give up with the diet.
 
I'm getting ready to make my Mango salsa for a little gathering tomorrow....

This is the Costco size recipe!:D
8 Mangos
4-5 Jalepeno peppers, depends on how hot they are.
2 Red onions
1-2 Red bell pepper
1 bunch Cilantro
Juice from 1 large Lime, or a couple of small ones
3 Garlic cloves

Mix to taste. If you like it hotter use more peppers or other hotter ones like habanero. Same for the garlic or lime flavors.

You can eat this with chips or served on chicken or fish. And of course the margarita and/or Corona on the side.....;)
 
please no more food... my dad owns a restaraunt in which im there 6 days a weak.:D
